Healthy, Vegan, Pumpkin Spiced Cinnamon Drink

Happy Monday friends, I hope everyone has had a nice weekend and have a fun week planned ahead. I have been up to my eyes today and yesterday at work after taking some time off last week, I feel like I haven’t had a second to breath (or blog). I am also going to be spending the next 3 days at a huge oil and gas exhibition with work, so I am already looking forward to Thursday 5pm! (my Friday).

Ok, so if you have been following my blog you will know that I broke up with coffee (click here to read my blog post on this) but I still love and crave warm comfort drinks, especially before bed. Anyway, after my vegan pumpkin soup recipe, I wanted to make a pumpkin spiced almond drink because although I don’t miss being constantly fueled with coffee, I do sometimes miss the Pumpkin Spice Latte, especially this time of year. Seeing all your snapchats and Instagram posts of the famous #PSL make me miss them, and sunny Scotland. (Not long till Christmas though, 46 sleeps to be precise.)

Not only does my version taste delicious, it’s full of natural ingredients too, much better than any artificial flavors and chemicals and is much lower in fat and calories.

Vegan Pumpkin Spiced Almond Milk

Ingredients
  1. 1 cup of almond milk
  2. 1 can of coconut cream (optional but recommended)
  3. 1 tsp. of nutmeg
  4. 1 tsp. of cinnamon
  5. 1 tbsp. of coconut oil
  6. 1 tbsp. of pumpkin puree
For the coconut whipped cream
  1. Leave the can of coconut cream in the fridge overnight
  2. The next day, turn the can upside down and scoop out as much of the ‘thick’ cream from the top as possible
  3. Whip until you have your coconut whipped cream
For the Pumpkin Spiced Almond Drink
  1. Combine all ingredients into a pan and stir over the heat for 4 minutes
  2. Strain to get rid of any pumpkin puree which didn’t melt into the almond milk
  3. Pour into your favorite mug and top with your coconut cream

One of my favorite before bed drinks, it tastes so good and really simple to make. Dairy and caffeine free, perfect for this time of the year – especially if you are somewhere cold like the UK.
