Delicious Festive Oatmeal

Christmas is coming, only 12 sleeps until I fly home! We have had a very festive long weekend, the tree and decorations are up and I have managed to do most of the Christmas shopping, pretty productive if you ask me 🙂

These past few mornings I have had more time to make breakfasts as opposed to my smoothies and taking overnight oats into work. I have been experimenting with a few ingredients including strawberry, cinnamon and avocado – yum.

Yesterday afternoon I made vegan dark chocolate and coconut Christmas pudding cakes (which will be on the blog tomorrow) and with the left over ingredients I came up with a delicious festive oatmeal recipe this morning.

These oats are dairy free, using almond milk as a substitute which makes it a great low fat breakfast. I have also used a number of powerful superfoods such as cacao, coconut oil and red currants – this breakfast is packed with nutrition.

Ingredients
  1. 1/2 cup of oats
  2. 2/3 cup of almond milk
  3. 1 small handful of red currants
  4. 1 small handful of raisins
  5. 1.5 tbsp. of coconut powder
  6. 1 tbsp. of coconut oil
  7. 1 small handful of raw cacao nibs
Instructions
  1. In a pan, heat the oats, 1 tbsp. of coconut powder, almond milk and coconut oil over a low heat until piping hot and cooked through
  2. Serve immediately in a bowl with the remaining ingredients sprinkled on top - enjoy!
