Delicious Veggie Wraps – Perfect Healthy Lunch Idea For Work

One of my new year’s resolutions was to really try and cut back on how much money I spent on take outs and deliveries at lunch time in the office. These past few weeks I have making these amazing Mexican vegan wraps which I have then taken into work. So quick and easy to make, you can prep for the whole 5 days and they are cheap too. Oh and delicious. And vegan. 😉

All you need is some veggies, wraps, avocado and spice mix. You can get stir fry veggies in a pack for convenience as well as the fajita spice mixes (just check the labels for any nasty’s).

Saturday night before work (Sunday is my Monday in the UAE) I literally make a huge veggie stir fry (with coconut oil obviously) which takes like 10 mins and then stick everything in the fridge. I keep a packed of re-sealable healthy wraps in my drawer at work and then at lunch time you can heat everything up of enjoy your spicy vegan wraps cold – I like both.

This week I used baby corn, edamame beans, peas, leek and spinach. I managed to find some delicious low fat wraps too, only 60 calories a wrap making this a pretty guilt free lunch even when I have two!

Along with my vitamin packed breakfast smoothie, these wraps give me a really nutritious day of food in the office. These low fat, vegan wraps taste so good, I am not even tempted to go buy anything else. They keep me full too.
