Snacks. I live for snacks.

I’ve found when I am being good and sticking to my salads and shakes, I get a major case of the snack attacks, usually around 2.30pm.

Rice and corn cakes are a popular snack are they are light and are low in calories. They really don’t taste great on their own but there are so many toppings you can have with them to get rid of the cardboard flavor. I love beetroot and wanted to make a vegan beet dip, as most of them I see have dairy in them – usually cream fraiche or sour cream (why!?).

I made this really easy beet and coconut dip last night. It takes 10 minutes and is the perfect partner for your rice cakes. Beets are so good for you too and are actually gaining some popularity in becoming a superfood. You can use this dip for pretty much anything, it would be really nice with veggies. And a huge bag or tortilla chips – yum. I am going to make some kale chips to go with it – you can read the recipe here.

Anyway if you are looking for a healthier spread or dip you should definitely try this. I love it so much I could just sit and eat it out the bowl. ENJOY – Jess x

Ingredients
  1. 250g vacuum packed beets
  2. 1 tbsp. chopped chives
  3. 4 tbsp. coconut cream
  4. 2 tbsp. of coconut flakes/shavings (optional)
  5. ½ tbsp. of coconut oil
Instructions
  1. Blend all the ingredients and get snacking!
